Hey Brandon, sometimes I go with 2 on a plant. So far all my biggest have come when I was strict and left only one. At this point i would go with the oldest one that has a good shape. I like the ones that are close to the "stump"

Also get a sheet over them or a little hut. I think it is important to shade them. If you are feeling lazy, direct lots of vines to grow over the fruit. the leaves do a good job of shading the melons.

Yes I've been feeling them with my hand to figure out the fruit temp. I've been shading them. Im trying to avoid having them feel warm to the touch, which I figure is too warm.

I think the shading keeps the melon cooler in the day and also perhaps a bit warmer at night which helps promote growth.
