It looks like a brain or an ocean coral. Im quite impressed with that stem, I think I myself could hang from that stem without it breaking! If Dan wants to share info to a wider audience, maybe one of the 100,000K+ subscriber gardening channels would do a special feature with him, or his son. Not sure he would want to go that route though.
