No, the GPC doesn't require a stem.

I have knocked the stem off before during loading. It was accepted at the weighoff. My question, if it is a 100-300 pound pumpkin. How do you determine if it is a field pumpkin or an AG without the stem?

I don't think that a field pumpkin would be confused with an AG even without a stem. They are very different.
One physical difference that comes to mind is that
The blossom end on a field pumpkin never retains the nub.

Protect it from frost...Frost can damage the skin. You wont get much pumpkin growth during the winter... Sounds like the season is over how many more pounds were you hoping to get? If the plant is not dead you can still gain a couple dozen pounds maybe.
