Yes, you can save seeds even if it's open pollinated.
Of course, if it's open, you may end up with an large, ugly crookneckumpkin.

Thanks for replying. I think I should've been a little more specific. I was wondering if its offspring would produce the same pumpkin.

Is a jack-o'-lantern a F1 hybrid? if it is then you will not get a jack-o'-lantern.
