If tripod gets it High Enough (Damn Yankees) you could have the pumpkin at a height near or above the truck bed's by stacking those plastic pallets under it (with your plywood?). Remove tripod. To heck with not making grooves in the patch for now; Truck right up next to pumpkin and slide/push it on with tractor forks. Think like we do of the Mayans like 'Wha...???', lol. Water down all 'slidings'; One end of 'slide' under stacked pallets should be like a toboggan, curved up to not dig soil. Attach ALL pieces with drywall or deck screws one+ on each corner so all won't slide apart. Pull from bottom with chain/winch, whatever...slow as H.
This'd be like a house-moving project. I'm thinking of raising the fruit and facilitating getting TO it and then going horizontal or getting the fruit TO the truck and erecting a
platform under it and then, pushing it onward.
Else and also/reiterating, see about tripod to lift to height AT where truck has to be, butt extend truck bed out with whatever available struts or 'beams' you have access to, like a boat dock out into a lake, and slide on from that point, (watch out for loading tips jumping up) perhaps constructed after fruit is lifted to (above) height.

Hire a HIAB truck crane. Lift it right out of your patch...no fuss no mess. That's what I did with the 2212.

Ask the Egyptians. I heard they know a thing or two about moving heavy things.
Seriously tho I would rig up a couple handyman jacks on each side of the lift gate to help it along. You'll need a couple friends to run the jacks. Bribe them with seeds or pumpkin pie for non growers :). I hope your pumpkin is too heavy for the lift gate. That will be a good problem to have (once it's on the truck)
