Planting 2 side by side a few feet apart is ok, personally I would plant both and not cull one or the other until both mains were on the ground and the forcast was free of storms/ wind. Its good to have multiple plants! Just cull them as they start to get crowded... the best plant wins.

I dunno what transplant shock even looks like but sun overexposure is probably equivalent. I put mine out and immediately put a clothesbasket over it (2, actually, turning one to polarize them and make for even more sun/wind/animal blockage) with a 1' X 1' piece of plywood on top and a brick or small rock, for at LEAST until it literally is growing out of it. Thought I had a better reference picture of it, but you'll get the idea with my explanation. I'd say 'treat your babies like they're your babies' - NO excess sun, until they are actually getting 'into it'.
