Here is my two cents. If your soil is nice and warm and is well aerated It would probably grow lots of roots off the stem. If your soil is cold and wet you increase your chances of having it rot. In my opinion in the long run there will be the same amount of roots off the stump regardless of how you plant it.

Bringing the soil up to the cots on watermelon plants is helpful for setting out long stemmed transplants. It helps protect the stems from insects and reduces wind damage. It makes for long, big underground stumps but the long stemmed ones ones I have transplanted this way don't root along the underground part of the stem. You will have problems from burying plants deep like this if the ground is too cool and if the ground doesn't drain well and stays soggy wet. My plants are set out in deep sand on bedded rows so stump damage is usually not an issue.
