Ok first question. Unfortunately the lot I wanted to use is under water right now so the other area I may use is 15' by as long as I want it. Is 15' to narrow? Second question how dry does my soil sample need to be before I send it out. Does it need to be like dry as dust or just not soaked?

Having a plot that is 15' wide, you could prune your plants into a flag pattern. Let the main grow straight out toward the edge of the patch and let your secondaries run 15ft across.

I'd be tempted to plant in the center about 15 ft from the end and train the first few sides back in the opposite direction from the main. This would put your stump and most of your plant in the heart of your cafeteria. You could still get most of the sides out to 10-12 ft by feathering around stump.
