How much time should there be between spraying insecticides and fungicides?

Depends on the product as well as the chemical formulation. Some can withstand water, some cannot. Some get absorbed into the plant and some cover the surface.
That being said, a nice average under good circumstances is 10-14 days.

Your vines are always growing. spraying insecticide last Saturday means that 2-5 ft of vines are not protected. Maybe this is different for systemic fungicides, I don't know. I agree with Jordan but, if there's pressure on the plant by insects or disease, maybe shorten the time. Greg

Very true. You have spray every week, but not the whole plant each week (end up with double applications). You could do some rotation (keeping track of what was sprayed when), or simply use a weaker solution and spray weekly.
