Am I correct in saying nodes { the small white roots? } should be cut all around the stem area where a fruit begins lifting up the vine?

Nodes are basically the entire section of the vine. The combination of leaf stalk, tap root, tendril, and possibly secondary vine, are the node.

...but yes, you can cut them, or if gently pulling them up (without completely breaking them) is enough to provide slack, then do that.

Also make sure the secondary at your stem is cut off, and we use styrofoam blocks to support the main vine as it is lifted off the ground. This keeps the weight of the vine off of the stem.

Ok maybe I was thinking of the "tap roots". All white roots that go from the sides or bottom of the vine into the ground?

Yup, those are the tap roots.
