Should a newly established fruit be fully shaded? Mine is at day 11. Do I need to provide full shade for it somehow?

Yes you should, just cover it with a white towel it prevents ripening

Should I drape the towel right over the fruit or set some stakes and place the towel over it with an airspace in between?

WalMart usually has white fabric on the $1 per yard rack. About 1.5 yards per pumpkin. If I get a real big one going, I put up a plastic tarp roof to shade and keep the rain off to prevent rot problems.
