HOw do I know that there is too much manure / fertilizer in the soil ?

Look at the plant and also the weeds in your patch they will tell you a lot every year I get some volunteer potatoes that come up they are worth as much as a soil test to me but understanding what they are telling you is the most difficult of things.
Do you have any particular reason for asking?

Tell us why you are concerned. Tell us what you have added and when. Then we may have an answer that may mean something based, on your reports. Finally if you used a soil test....when was it taken, what has been done since. Basically no one can help or give opinion with out the support, of the local program facts.

I have small problem. First true leaves on my both plants are dying. They have spots on them (look in my diary). I was wondering is that mean that there is too much of something, or just not enough.

Your newer growth is looking fine,I think the problem was caused by the first true leaf growing in poor light conditions and then not being able to cope with full sunlight when planted out.
I get real nervous this time of the season as well it is caused by to much adrenalin and not enough patience.
