A few days ago, i watered my plant very heavily and my roots are now on the surface. while i watered i accidentally broke away at some of the dirt covering these roots. my question is will this affect the plant and if it does will it correct itself?

No, it dont affect it at all, your water is mostly at the top of your soil so your roots are taking the easiest way to water, after a while they will start going deeper once it dries out some at the top,I usually cover my roots when I see them if they are in direct sunlight.

Some bigger roots that emerge from the ground can turn green, which is kinda strange and cool! I have the same thing too, I just left them and I have a 400 lbs and 200 lbs pumpkins so don't worry!

Roots coming, to the top, indicate that deep watering has been short, of need. There is no other reason, for roots to surface, or be that close, to the top.
